This simple courgette antipasti is a great way to enjoy fresh courgettes in the height of summer, with a dash of mint and lemon.

  1. Place the grated courgettes in a colander and season with salt. Give the courgettes a mix then leave for 20 minutes.

  2. Squeeze out any excess moisture from the courgettes, then mix with the other ingredients. Taste and season again if necessary, then serve.
