Serve with gooseberry dressing
Ingredients Four fresh tuna steaks
Marinade 1 lime 1 orange 2 cloves garlic Olive oil Salt and pepper Gooseberry relish 1 onion diced and softened in a little olive oil 200g gooseberreis 200g apples, peeled 50 raisins 1 nut of fresh ginger, chopped 100g sugar 50 ml white wine vinegar Good bunch of lemon balm, lovage or marjoram Relish method Place all ingredients in a heavy saucepan, bring gently to the boil and simmer for 15 minutes. Cool. Marinate the tuna steaks before barbecuing until cooked. Serve with the relish. |
