Serves 4 – 6 people Ingredients 6 cloves garlic 200g bread 2dl olive oil 500g tomatoes 250g peeled cucumber 200g peppers (seeded) 1dl vinegar 100g chopped onions 100g diced tomatoes 100g diced cucumber croutons
Method Chop the garlic and dice the bread and put them in a bowl with the olive oil. Let stand for 10mins. Chop the tomatoes, cucumber and the peppers. Add to the bread mix with the vinegar and stand for a further 10mins. Mix the soup in a blender and season with salt and pepper. You may want to add chilled water if you find it too thick. Serve very cold with the remainder of the ingredients. |
