Ingredients 200g digestive biscuits 75g butter (preferably unsalted) 200g cream cheese 300g condensed milk (Carnation) 1 small can fruit (Andy used 300g mandarins oranges in natural juice) 1 lemon (squeezed for juice) Directions Break the biscuits into tiny pieces and put them in a plastic food bag. Crush with a rolling pin until they have turned to crumbs.
Place the butter in a pan and gently heat until it melts. Turn off the heat and put the pan on a heatproof mat. Carefully add the biscuit crumbs and stir until they are coated with the butter.
Put the biscuit mixture into a flan tin (preferably with a loose bottom). Spread the mixture evenly all over the base and up the sides of the flan tin. Pop into a fridge for at least 30 minutes.
Drain the fruit and carefully chop into small pieces. When the biscuit base has had time to chill, put the fruit on top. In case any juice or cream seeps through the tin, place it on a plate or baking tray.
Put the cream cheese, condensed milk and lemon juice into a mixing bowl and whisk everything together. Remove the flan tin from the fridge and pour the creamy mixture on top of the fruit.
